Poached pears with vanilla rooibos and mascarpone cream

This week we have prepared a delicious recipe for poached pears with vanilla rooibos and mascarpone cream. It's a dessert that will accompany a good family meal on fall evenings.

Here is the list of ingredients:

For the poached pears:

• 4 ripe pears
• 2 tablespoons of vanilla rooibos leaves
• 1/2 cup sugar
• 2 cups of water
• 1 vanilla pod

For the mascarpone cream:

• 1 cup of mascarpone cream
• 1/4 cup powdered sugar
• 1 teaspoon of vanilla extract

Instructions :

1. Prepare the poached pears:
• Peel the pears, leaving the stems intact.
• In a saucepan, bring the water, sugar, rooibos leaves and the vanilla pod split in two to a boil.
• Add the pears to the simmering liquid and let them poach over low heat for about 20 minutes, or until tender.
2. Remove the pears from the pan and let them cool.
3. Preheat your oven to 200°C (392°F).
4. Once the pears have cooled, place them on a baking tray and bake for about 10 minutes, or until lightly browned.
5. Prepare the mascarpone cream:
• In a bowl, mix the mascarpone cream, powdered sugar and vanilla extract until you obtain a smooth cream.
6. Serve the roasted pears on individual plates, accompanied by a generous dollop of mascarpone cream.
7. You can sprinkle a little icing sugar on top of the roasted pears for an extra caramelized effect if you like.
